Seeing my garden grow is giving me so many ideas for fresh dinner ideas! I love utilizing what is in season and that is exactly what we’re doing with these easy and fresh Summer Pasta Recipes! So many yummy, easy and family favorite ideas to try this season. Let’s dig in!
In my opinion, tomatoes are one of the easiest things to grow in the Summer and I love taking advantage of their juicy goodness. Even if you don’t have your own garden, you can definitely find some juicy, ripe tomatoes at the store perfect for one of my favorite Summer pasta recipes. Plus, this dish is so quick and easy – meaning you don’t have to take away from the Summer fun to spend all day in the kitchen!
You can really tweak this recipe to fit whatever veggies you have in the fridge, but I’ll keep it simple and straight forward for you! A handful of spinach, some fresh tomatoes and bright herbs is really all you need. Add in some of your favorite cheese and a squeeze of lemon – perfection! Sometimes we will pair this fresh pasta with a crisp arugula salad or some crusty bread, you really can’t go wrong.
Fresh Tomato Basil Pasta
- 16 oz Angel Hair Pasta
- 4 cups Tomatoes diced
- 1/4 cup Fresh Basil chopped
- 2 tbsp Minced Garlic
- 1 cup Fresh Spinach
- 3 tbsp Olive Oil
- 1/2 cup Shaved Parmesan Cheese
- Salt and Pepper
- 1/2 Lemon
- In a large pot, bring water to a boil
- Add in pasta and cook according to box
- In a separate skillet, over medium heat, saute garlic in olive oil for about 1 minute
- Add in spinach and tomatoes
- Once pasta is cooked and drained, place in a large bowl. Toss with tomato mixture
- Top with a squeeze of the lemon, fresh basil, parmesan and salt + pepper. Enjoy!
You can really make this recipe your own by adding your favorite veggies, meats or cheeses. Try adding some shredded grilled chicken, onions, or even swap the parmesan for some creamy cheese like marscapone!
