Easy Summer Dinner Ideas – Grilled Pizza Night & More!

CortneyJuly 3, 2020

It’s summertime and the livin’ is easy – but that doesn’t mean my mom duties are out the window. With the kids not in school, I’m always looking for new and fun ways to keep them entertained. One of the best ways to multitask? A fun dinner night that gets the whole family involved! These Easy Grilled Pizzas are always a hit, check out the recipe + some other easy Summer dinner ideas below.

As a busy mom, I like my recipes to fall under two important categories: easy and delicious. If it happens to turn into a fun family evening – well that’s a major bonus! Plus, you may be able to sneak in some hidden veggies on top for a major mom win.

Pizza night is always a hit and watching the kids get involved makes it even more special. You could opt for homemade dough or purchase dough from the store, but these grilled pizza are made with an easy trick – naan bread! This 3-Pack includes 12 minis, perfect to keep on hand for when you need an easy dinner idea.

Once you have the base covered, all you need is your toppings. Traditional pizza sauce is always a hit but you can also switch things up. Try Alfredo Sauce, BBQ Sauce or Pesto for a fun twist. Grab some veggies + your favorite cheeses and you’re all set! These can also be made in the oven, see the note below!

Easy Grilled Pizzas

Servings: 4 Pizzas

Ingredients

  • 4 Naan Bread
  • 2 tbsp Olive Oil
  • Sauce of Choice
  • Veggies of Choice
  • Cheese

Instructions

  • Use one naan bread per person
  • Lightly brush olive oil on either side of naan bread, about 1 tbsp per bread
  • Place on grill, a few minutes on each side until bread is hot with grill marks
  • Remove and add toppings. If adding meat, ensure you prepare the meat according to individual packaging before using.
  • Add back to the grill if needed, to melt cheese
  • Enjoy!

Notes

This can also be done in the oven, preheat to 375 degrees and coat top of naan bread with a little olive oil. Add sauce and toppings. Bake about 5-10 minutes, until cheese is melted and toppings are warm. Enjoy!

See how easy! It’s almost too simple for a full recipe but I wanted to share. Below are a few other easy Summer dinner ideas I am hoping to try this month. Do you have any ideas I should add to my list? Check out some fun photos of Adam on the lake house grill!
